I’m saying goodbye to my 20′s today. They were good to me and it’s hard to believe I’m entering a new decade. I have no doubt my 30′s will be just as amazing. Bring it on, 30.
Yep. I turn 30 today. I’ll be out celebrating with tacos and beer. See you on the flip side.

Yum: Chicken Enchiladas

I found this recipe a few years ago in a magazine and I’ve been making it ever since. It quickly became and has stayed one of our favorite meals. We usually have enough leftovers for at least one meal, maybe even two. I’ve also made this for a weekly dinner night with our friends and it went over really well. Give it a try and enjoy!
4 tbsp. canola oil
2 small zucchini, diced
1 small red onion, chopped
1 ear of corn, kernels cut off the cob (about 1/2 cup)
1 2 1/2-3 pound rotisserie chicken, meat shredded
1 1/2 cups (6 oz.) shredded Monterey Jack
Kosher salt and pepper
1 can green enchilada sauce
- Heat oven to 400* F. Heat 1 tbsp. of the oil in a medium skillet over medium-high heat. Add the zucchini, onion, and corn and cook, stirring until the onion begins to soften, 3 to 5 minutes. Transfer to a large bowl.
- Add the chicken, Monterey Jack, 1 tspn. salt, and 1/4 tspn. pepper. Mix to combine.
- Wipe out the skillet and heat the remaining oil over medium heat. One at a time, cook the tortillas in the oil until softened, 10 to 15 seconds per side. Transfer to a paper towel-lined plate.
- Divide the chicken mixture among the tortillas, roll them up, and place seam-side down in a large baking dish. Cover with green enchilada sauce and Monterey Jack cheese. Bake until heated through, 8 to 10 minutes.
- Top with sour cream. Serve with rice or beans and enjoy!

It’s Like a Heatwave

Burning in my heart, Can’t keep from crying, It’s tearing me apart. (You’re welcome.)
It is almost October. I was in Malibu yesterday and it was 104 degrees. Today is supposed to be 10 degrees cooler. Sweet. 90 degrees. At the beach. At the end of September.
I love California. I really do. I’ve never lived anywhere else (but I’ve wanted to). I know that we pay a premium to live where it is warm and sunny 360 days a year. Honestly. It doesn’t rain much here.
But Mother Nature. We have moved on from summer. It is now fall. And it shouldn’t be 104* in fall.
I have scarves waiting to be worn. I just ordered new boots that will stay in the box until this heatwave passes (p.s. we have had many Octobers stay well above the normal temperatures-we’ll see what happen with this one).
I will only complain this once. We can’t control the weather. But sometimes, I just wish for fall like weather in fall, instead of a heatwave. That’s not too much to ask, is it?
Oh, and maybe the leaves could change colors too.
The Name Game

I’ve mentioned before that I am in the middle of the name changing process. Legally, I’ve taken all the necessary steps to change my name. But mentally it is taking a bit longer.
Being in the middle of a job search, I’ve mostly applied for jobs with my maiden name. Once more of my documents had been changed, I realized I should just start applying with my new married name. I changed my resume to reflect the name change. I signed up for a new email account with my new name. I continued to apply for jobs, but now I was Melissa NewLastName.
Two days after applying for a job, I received a voice mail from the hiring manager. I returned his call later in the day and this was our conversation:
Me: Hi Hiring Manager, This is Melissa MaidenName. I’m returning your call from earlier regarding my application.
Hiring Manager: Hi. How are you? I’m sorry what was your name?
Me: Melissa MaidenName
Hiring Manager: Hmmm…(I can hear papers being shuffled around the desk) I don’t have a resume for that name. Melissa MaidenName?
Me: It’s Melissa M-a-i-d-e-n-N-a-m-e. You called me earlier this morning. Around 10:30. I applied for the open position.
Hiring Manager: I have a resume for Melissa NewLastName.
Me: Yes! Oh, that’s me!
I then explained I was just married and going through the name change process. I thought my chances of being interviewed were gone. Why would you want to hire a person who doesn’t even know their own name?
I start on Monday.
Couches are good for one thing

Let’s be serious. Couches are good for many things. Sleeping, eating, relaxing and my all time favorite: tv watching. I am a self proclaimed couch potato. I love to sit on my couch and watch some tv. Really any tv. But I love reality tv the most.
One of my goals was to take better care of myself through eating and exercise. I eat pretty well. But exercise is no friend of mine. Why would I get up and sweat when I can watch the Kardashians or Top Chef?
Enter my kind of workout program: Couch to 5K. Perfect! There is a couch involved with some sort of 5K. I can get on board with this.
Except the name is deceiving. Couches are not really involved. In fact, it’s to motivate you to get off the couch. Why?
But I set a goal and I am one to at least try to achieve my goals. I’m one week into the Couch to 5K program. Which means I only have to jog for 60 seconds and walk for 90 seconds. That’s not so bad. I’m not even sure that really counts as exercise. Here’s the kicker. In 2 months, I’m supposed to be running a 5K. Without my couch.
